I have to agree with those who say, who in their right mind, plucked what looks like a rock out of the waters' edge, cracked it open, to find a slimy looking center, and thought, I should try eating that? I wouldn't have been the first person to try that. But oh can they be good.
I like oysters raw - served very simply with a little lemon or vinegar, maybe a dash of hot sauce. How can I describe this, despite the looks, they are not slimy, more slippery. Bite into them, and there is a texture. I find the Pacific coast one's more flavorful, more salty, than Atlantic or gulf coast. I am cautious of raw oysters from warm areas, colder water generally is safer. In New Orleans, order them fried.
I like them battered and fried. I can't tell you how to do that, as I have always left that the pros. I have never opened an oyster, always left that the pros.
I have to put oysters on the list of things that look weird, but taste wonderful. Don't let looks scare you away.
Oysters...clams....mussels...snails....I aint having none or it. I don't care how much butter lemon or hot sauce.......

DeleteI used to love eating raw oysters, but Ken has gotten sick from them too many times. We've decided that it's not worth the risk at our age and have given them up. Still like 'em roasted or fried!

My soft introduction to oysters was Oysters Kilpatrick. I was cautious and the bacon, Worchester sauce and salt helped. The next time I tried them au natural and I was still not sure. I persisted and grew to really like them, along with mussels. I'm not sure what they cost at a market but if out in our metricated country where they are still sold by the half or full dozen, maybe AU$20 a dozen for good quality oysters.

DeleteBIG seafood lover here. I can eat the raw oysters, but I prefer steamed clams, oysters, and mussels. And really love them as part of a dish (especially Cioppino!) However, I would never try to prepare them myself. Aside from shrimp and standard fish (salmon, cod, tuna, swordfish, and tilapia) I’ve only ever steamed crab legs (EXPENSIVE!) I’ll leave the other to professionals (and not having been to a restaurant in a year - oh, how I miss it all!)

DeleteScare me away?? Not a chance. But, I do share your caution. I only eat them near cooler waters. I remember going to a soft opening of a local restaurant two or three years ago. They kept bringing things to the table for us to try. When they brought the oysters, I said no way. It was 110 degrees outside in the middle of a desert summer. Oysters don't belong here.
