What have I been up to in the kitchen? Chicken enchiladas, roast beef, eggs benedict, and I can't remember what I made last Thursday.
Who have a talked to? Amy, Julia, Dian, Warren, Ruth, a bunch of doctors and nurses. My Sweet bear of course.
What have we learned this week? If you have lost a meaningful amount of weight, talk to your doctor about adjusting medications.
What blogger had a nasty fall this week? Blobby in Cleveland, wishing him a full recovery.
What bloggers are missing in action? Ken and Walt in France. No updates for a couple of weeks is just not like them. They have been at the top of my daily read list of years.
What am I reading this week? Unpublishable by Danny Gregory, and a book on Neurodiversity.

I can't remember why, but I stopped reading Ken's and Walt's blogs. I hope they are ok.

DeleteI make what I call EnchiLasagna. A mashup of the two with layers of tortillas and beans and chorizo, peppers and cheese etc, and then baked and cut into squares like a lasagna.
ReplyDeleteAnd as i sometimes cook like my mother, I make so much that I can freeze another eight meals out of it to have on nights we don't feel like cooking.
The enchiladas where chicken and cheese, with a yellow curry sauce. I had a couple left over the microwave on Monday evening late.
DeleteEggs Benedict...yummm. I don't make those at home. It's a treat to eat them at a restaurant.
ReplyDeleteThey are.bit involved to make, I was very pleased with the poached eggs, the hollandaise was a little to thick.
